I get asked often what a "day in eats" looks like for me. I've been seeing these "what I ate" posts and I decided to put together a post sharing what meals usually fill up my day. Disclaimer: this completely varies depending on what my body is craving, if I am at home or traveling and even what day of the week it is (we tend to eat 2-4 meals out during the weekend). I had shared in a previous post that on weekdays, I try to eat at home for most meals. It keeps my body feeling good, it keeps our wallet happy and it keeps my energy levels high (#winwin).
Anyhow, this is what I ate yesterday:
I started my day off with shakeology (photo is an oldie but goodie). Chocolate is definitely my favorite flavor from them all and lately I have been blending it with frozen banana, frozen cherries, peanut butter, almond milk and ice. I also have been adding a couple of spoonfuls of greek yogurt (love noosa!) to add some protein since I know the baby needs it.
For lunch, I had a quinoa and tempeh salad. I have been on a kick with this lunch lately. It's so yummy and perfect for this weather! I basically just mix 1/2 cup of quinoa and 1/2 block of tempeh with whatever raw veggies we have at hand and use Bitchin Sauce + lemon + spices as a dressing. Above is the mise en place with the ingredients I used yesterday. Adding herbs to this mix is also delicious! I added cilantro last week. I ate the salad with a couple of milton's nacho cheese chips and a little pack of seaweed. I always need the crunch factor!
l'm not a morning snacker but I usually do get hungry between lunch and dinner. Yesterday I happened to get my workout in the afternoon so by the time I was done, I was ready to eat something! I keep hard boiled eggs in the fridge all the time since they are the perfect protein packed snack so I grabbed a couple and ate them with hummus + side of grapes. I also sipped on some Harmless Harvest. Love this brand of coconut water!
For dinner, I had leftovers from a turkey spaghetti that I had made this past weekend. Basically I just cooked pasta and served it with marinara turkey sauce, spinach, feta cheese and some hummus (adding hummus to marinara makes it super creamy and delish!).
A couple of hours after dinner, I snagged one of these babies from our pantry and enjoyed it while working on my vision board. I know these aren't clean or healthy - but, I LOVE THEM! Long gone are my days of constant restriction. I try to moderate my sugar intake but who doesn't need a treat from time to time? Butterscotch is my favorite flavor!
In terms of drinks, I tend to carry a water bottle with me and only drink water throughout the day. We also tend to have kombucha in our fridge as well as sparkling water.
