Summer Must Make

This salad had been my mind for daaaays so I finally caved and made it. I had tried several variations of it at different restaurants so I just decided to recreate from what I could remember and from what sounded good and fresh for the summer. 

It's literally a 5-7 ingredient salad and it comes together super quickly. Well, that's if you buy the pre sliced watermelon the way I did #sorrynotsorry.

Hope you guys enjoy it! 

Watermelon, Mint & Feta Salad (serves 4)

Ingredients:

  • 3 persian cucumbers or 1 large cucumber, diced into triangles
  • 1 pack of pre sliced watermelon or 1/4 of a large watermelon, cut into squares
  • 1/2 cup of feta crumbles
  • 24 (around) mint leaves, chopped
  • 2 tablespoons of olive oil
  • salt and pepper to taste

Method:

Mix all ingredients gently in a large bowl, chill for a couple of hours and enjoy!

Note:

You will see one of my photos contains tomatoes. Our garden has been yielding a good amount of cherry tomatoes and I just added a handful to this particular batch since I didn't want them to go bad (they were already ripe!). Feel free to add any if you have some in your fridge!
