I'm all about healthy snacks. Having a toddler has made me think out of the box in terms of easy and nutritious options to snack on. Unfortunately, a lot of store bought snack have not-so-good -for-you ingredients in them. We do not eat perfectly at home, and of course we enjoy treats outdoors here and there, but I am a firm believer that if we can learn to healthy-fy some things, then why not? No harm there.
My coach has a toddler too and we usually share recipes that we enjoy with each other. She texted me last week about these popsicles and I knew I had to make them. I not only was thinking of Sienna but also of myself since I have been craving fruit a lot.
These literally took me 15 minutes to make and assemble and they turned out delicious!
- 1 can of coconut milk
- 2 tablespoons of raw honey
- 2 cups of fresh strawberries
Blend all of the ingredients until smooth and transfer to your popsicle molds. We have these.
Freeze for 6 - 8 hours and enjoy!
